• 1 green bell pepper (diced)
• 1 yellow bell pepper (diced)
• 1 anaheim pepper (or other spicy pepper, diced)
• 1 can diced tomatoes
• 1/3 cup tomato sauce
• 1/2 tsp salt
• 3 eggs
• 1/4 cup feta cheese or goat cheese
• 1 tbsp chopped parsley
• Hot sauce (optional)
