Ingredients

  • 1 whole 4-pound chicken cut into 8 pieces, or 4 pounds chicken wings, backs, necks, and/or legs
  • 3 carrots, 1 peeled (cut 1/2 inch coins)
  • 2 stalks celery (chopped)
  • 2 parsnip, 1 peeled (sliced in 1/2 inch coins)
  • 2 medium onions (cut into quarters)
  • 4 cloves garlic ( smashed)
  • 3 fresh or 2 dried bay leaves
  • 1 small bunch parsley
  • 1 bunch dill
  • 1 tbsp salt
  • 1 tsp pepper
  • 4 eggs
  • 1/4 cup schmaltz (chicken fat) or vegetable oil
  • 1/4 cup chicken stock or water or seltzer
  • 1 cup matzah meal
  • 1 tsp salt
  • 1/4 cup fresh dill and parsley (chopped)
  • 1/4-1/2 tsp ground white pepper
