Phil Vickery's delicious (and easy) baked pork steaks with a pepper & olive sauce is a great summer dish with a taste of the Mediterranean.
Ingredients
- 1x pack Helen Browning’s organic pork leg steaks
- 30ml olive oil
- ½ small onion, peeled and finely chopped
- 1 garlic glove, peeled and finely chopped
- ½ 280g jar chargrilled peppers, drained and chopped
- 8 black olives, pitted and chopped
- 100ml vegetable stock
- 2 tbsp freshly chopped basil
