Roast Chicken Roll - Chicken Farmers

Ingredients

• 2 tbsp (30 mL) olive oil
• 8 oz (230 g) finely chopped pancetta
• 2 tbsp (30 mL) finely chopped sage
• 1 tbsp (15 mL) fennel seeds, crushed
• 1 tbsp (15 mL) finely chopped fresh rosemary
• 1/2 tsp (2.5 mL) hot pepper flakes
• 4 cloves garlic, minced
• 1/4 cup (60 mL) white wine
• 1/4 cup (60 mL) finely chopped fresh parsley
• 1/4 cup (60 mL) finely chopped fresh basil
• 6 boneless, skinless chicken breasts (1 1/2 lb/700 g)
• 1 tsp (5 mL) each salt and pepper
• 1/2 cup (125 mL) white wine
• 1 cup (250 mL) chicken broth
• 1/2 cup (125 mL) 35% whipping cream
• 2 tbsp (30 mL) finely chopped fresh sage
