• 1 onion, chopped
• 1 red bell pepper, chopped

• 1 1/2 cups long-grain rice
• 1 (14.5) ounce can diced tomatoes
• 2 cups chicken broth, preferably less-sodium
• 1/2 teaspoon saffron threads
• Freshly ground pepper to taste
