• 1 red onion, peeled, halved lengthways and cut into thin wedges
• 3 tbsp olive oil
• 2 tbsp wholegrain mustard
• 2 tbsp maple syrup
• Pinch smoked paprika
• 2 tsp fennel seed, toasted and lightly crushed
• 3 garlic cloves, crushed
• Zest and juice of ½ lemons
• 1 tbsp thyme leaves
• 4 pork chops
• 2 tbsp parsley chopped
• 2 tbsp tarragon leaves chopped
