Ingredients

• ½ teaspoon Gathering Place sea salt
• ¼ teaspoon Gathering Place black pepper, freshly ground
• 1 lb stewing beef or chicken cubes, optional
• 1 tablespoon olive oil
• 2 whole onions, chopped
• 2 cloves garlic, minced
• 1 teaspoon Gathering Place thyme
• ½ teaspoon Gathering Place oregano
• 1 tablespoon Gathering Place parsley
• 2 whole Gathering Place bay leaves
• 5 large carrots, chopped
• 3 stalks celery, chopped
• 2 cups vegetable or beef stock
• 1 large can tomato, diced
• 1 cup cherry tomatoes
• 4 large potatoes, cubed
• 1 cup peas frozen or fresh, optional
• 1 tablespoon red wine vinegar
