Ingredients

• 2 tbsp olive oil
• 1 onion, finely diced
• 2 cloves garlic, finely chopped
• 500 g pumpkin, diced (Hokkaido)
• 2 courgettes, diced
• 1 l vegetable stock
• 1 tin coconut milk
• salt, pepper, to taste
• 4 tsp JS Vegetable Allrounder
• Optional fresh parsley or coriander
