• ½ cup red onion, diced
• ½ cup Mild Cheddar Cheese
• ½ cup Swiss Cheese
• ½ cup pickles, diced
• 16 ounces elbow macaroni pasta
• 2 hard boiled eggs, roughly chopped
• fresh parsley or paprika, for garnish
