Kiln's green nam jim recipe is a fabulously punchy version of this classic Thai dipping sauce.
Ingredients
- 2 green chillies
- 1 garlic clove
- 1 coriander root, or use a few coriander stalks if unavailable
- 1 dash of fish sauce
- shrimp paste, one pea-sized lump
- palm sugar, to taste
- lime juice, to taste (you'll need plenty)
