Ingredients

• 250 g cooked Puy lentils
• 150 g baby spinach
• 1/2 a large cucumber, chopped
• 8 cherry tomatoes, halved
• 2 spring onions, sliced large handful of fresh parsley or coriander, chopped
• 1 Benecol Original Yogurt drinks 67.5ml
• 1 teaspoons of honey
• 1/2 tbsp Dijon mustard
• 1tsp mustard seeds
