Chicken Paprikash

Ingredients

• 6-7 boneless, skinless, chicken thighs (Bone-in with skin is more traditional, but my family won't eat it if the "bones show!")
• 3/4 tsp pepper (to taste)
• 1 tsp salt (to taste)
• 3 Tbsp butter
• 1 onion, chopped
• 1 yellow bell pepper, chopped
• 1 red bell pepper, chopped
• 4 garlic cloves, minced
• 2 Tbsp tomato paste
• 4 Tbsp + 1 tsp Sweet Hungarian Paprika, divided
• 2 cups chicken broth
• 3/4 cup sour cream, plus dollops for serving
