PESTO PASTA WITH OPTIONAL CHICKEN - Sherry's Kitchen Table

Ingredients

• 1 bunch of parsley
• 1 bunch basil
• 2 or 3 clove garlic
• 1/2 cup grated parmesan
• 1/2 cup olive oil
• 1/2 cup pine nuts, walnuts or mix of both
• I threw in 2 bits of sundried tomato, 3 olives which were in my fridge. But entirely optional!
• salt and pepper to taste
• pasta for two
• 2 tbsp olive oil
• 1 small onion
• 2 tbsp pancetta
• leftover roast chicken, chopped up
• 1 cup mushrooms
