- 3 bay leaves
- 1 thyme sprig
- 1 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp ground black pepper
- 60g tomato purée
- 4 tbsp coconut oil
- 2 plantains peeled and sliced into 1cm rounds
