Berry Recipe: Chipotle-Strawberry Chicken Grilled Cheese

Ingredients

• 2 tsp grapeseed oil or sunflower oil
• 1 shallot, minced
• 1 garlic clove, minced
• 1 1/2 cups chopped strawberries
• 1 Tbsp red wine vinegar
• 2 tsp minced chipotle chili canned in adobo sauce, (gluten-free. if desired)
• 1/4 tsp salt
• 2 tsp finely chopped rosemary
• 2 Tbsp butter
• 8 slices crusty whole grain or gluten free bread
• 8 oz sliced cooked organic chicken
• 4 oz sliced brie cheese
• 2 cups arugula
