- Step 2 To prepare topping, mix together grated Parmigiano Reggiano, pecans, parsley and 1 minced garlic clove in a small bowl. Set aside.
- Step 3 Bring 4 quarts water to a boil to cook pasta. Once boiling, add pasta and cook for about 10 to 12 minutes or until al dente.
- Step 4 While water is coming to a boil, remove tomatoes from oven and place in small bowl. Increase oven temperature to 218°C.
- Step 6 When pasta is cooked, strain it and pour into the large bowl. Mix in the roasted vegetables with the tomatoes. Pour this mixture into an 11×7-inch oven proof dish.
