Caramel Apple Pie - PEJU Winery

Ingredients

• 3 pounds granny smith apples peeled, cored, and thinly sliced
• 2 tablespoons lemon juice
• 1 cup granulated sugar
• ¼ cup corn starch
• 1½ teaspoons ground cinnamon
• ¼ teaspoon ground nutmeg
• 1 teaspoon vanilla extract
• 2 9-inch pie crusts (Store-bought or try Chef Nic’s homemade pie crust recipe!)
• 2 tablespoons of unsalted butter diced
• 1 large egg lightly beaten
• 1 cup Mascarpone Cheese
• 1 cup heavy cream
• Zest of 1 orange
• ½ cup regular sugar
• 1 tablespoon vanilla extract
