Ingredients

• 2 garlic cloves, finely chopped
• 1 tbsp red wine vinegar
• 1 ½ tsp Diamond Crystal kosher salt
• 1 3-4 ounce tomato (or about half of an average-sized beefsteak), coarsely grated
• ½ oz drained oil-preserved Calabrian chiles, stems trimmed off and finely chopped
• ¼ c mild, fruity extra-virgin olive oil
• 1 ½ lb Persian cucumbers, ends trimmed
• 1 small red bell pepper (about 10 ounces), split in half and seeded
• ½ c chopped parsley
• ¼ c chopped basil
