Orange Vanilla Cake - Palestine In A Dish

Ingredients

• ½ cup olive oil or unsalted butter (melted)
• 1 cup granulated sugar (use ¾ of a cup if oranges are sweet)
• 1 teaspoon vanilla
• 2 medium size eggs (at a room temperature)
• 2 cups unbleached all-purpose flour
• 1 teaspoons baking soda
• ¼ teaspoon salt
• 2-3 oranges, juice and zest (about 1 cup of juice)
• Zest of one lemon (optional)
