Ingredients

• 3 medium sweet potatoes, peeled and chopped into large chunks
• 1 ½ lb lean ground beef
• 1 tbsp olive oil
• 1 medium onion, diced
• 1 medium sweet potato, sliced
• 4 garlic cloves, chopped
• 1 cup vegetable broth
• 1 tbsp tomato paste
• 1 tbsp chopped parsley
• salt and pepper to taste
