Ingredients

• 1 stick butter
• 3 T flour
• 1 C half and half or milk
• 1 onion, minced
• 3 cloves garlic, minced
• 1/4 t nutmeg
• 6 C fresh spinach leaves
• 2 T olive oil
• salt and pepper to taste
