Roasted Sweet Potato with Sweet Dream Sauce – African Dream Foods
This recipe is inspired by the classic South African combination of apricot-basted snoek (an oily fish commonly found along the coast of Southern Africa) and sweet potato.
Ingredients
- 3 medium-sized sweet potatoes
- Red onion, thinly sliced, to garnish
- Black sesame seeds, to garnish
- Extra feta cheese, crumbled, to garnish
- 1 can (170 g) tuna in oil
- 3 tbsp Sweet Dream Sauce
- 1/2 cup crumbled feta cheese
- Lemon juice, from 1/2 lemon
- Lemon zest from 1 lemon
