LDC Pozole Verde de Pollo ( Green)

Ingredients

• 2 1/2 tablespoon oil
• 2 1/2 onion, diced
• 15 cloves garlic chopped
• 5 teaspoons cumin toasted and ground
• 15 cups chicken broth
• 5 cups hominy soaked in cold water overnight
• 10 pounds chicken Boneless thighs or breasts
• 5 teaspoons oregano
• 2 1/2 pound tomatillos
• 5 jalapenos, cut in half
• 5 poblano chilies cut in half
• 1 1/4 cup cilantro coarsely chopped
• 5 tablespoons lime juice (~1 lime)
• salt and pepper to taste
• Top with Cilantro Avocados and Diced onion
• Garnish:
• 3 Bunches Cilantro ( Washed and Dried)
• 6 Avocados Sliced on site
• 2 Diced Purple onion
