• 55 g brown sugar
• 1/8 tsps cardamom
• 1 1/2 tsps cinnamon
• 1 egg
• 312 1/2 g flour
• 1/2 grand marnier
• 1 1/2 Tbsps chestnut honey
• 8 Tbsps ice water
• 1/4 lemon (juice)
• 1 tsp kosher salt
• 1/4 tsps nutmeg
• 1 1/2 tsps orange zest
• 1 Tbsp rum
• 1 tsp salt
• 1/8 tsps ground star anise
• 2 Tbsps sugar
• 18 Tbsps unsalted butter
• 50 g white sugar
