• 4 mild pork sausages (about 1 pound)
• 1 1/2 pounds small waxy potatoes such as Yukon Gold or red new potatoes
• Salt
• 1 large (8-ounce) bunch lacinato or curly kale, tough stems discarded, leaves roughly chopped
• 2 tablespoons olive oil
• 1 tablespoon chopped mixed fresh herbs such as sage, rosemary and thyme
• 4 scallions, green and white parts, thinly sliced
• Freshly ground black pepper
• Coarse-grain mustard
