• 1 pound bone-in chicken thighs
• 1/4 teaspoon ground cinnamon
• 1/2 tablespoon neutral high-heat cooking oil
• 1/4 cup chopped cilantro
• 1/4 cup finely diced onion
• 8 corn tortillas
