Artichoke Beef Burritos

Ingredients

• 12 Ocean Mist Farms baby artichokes
• 1 tbsp. olive oil
• 1/3 medium onion, chopped
• 2 tsp. minced garlic
• ½ pound lean ground beef or sausage
• 1 medium tomato, chopped
• 1/3 bell pepper, chopped (red, green or yellow)
• 2 tsp. cilantro, chopped
• ¼ small can of El Pato sauce
• Pinch of cumin
• Salt and pepper, to taste
