Creamy Mushroom Soup

Ingredients

• 1 onion peeled & quartered
• 2 cloves of garlic peeled
• 30 g butter
• 500 g fresh brown mushrooms cut into quarters
• 50 ml marsala wine (dry red or white) (omit for halal)
• 1 tbsp of all purpose flour
• 600 ml chicken or vegetable stock
• 2 tsp sea salt
• 1 tsp black pepper
• 100 ml whipping cream
• Chopped fresh parsley and thyme to serve
