Ingredients

  • 1 1/2 cup fresh or frozen berries
  • 2 medium ripe bananas, sliced into 1/2-inch pieces
  • 1/4 cup honey
  • 1 cup uncooked quick oats
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 cup fat free milk
  • 1 large egg
  • 1 tsp. vanilla extract
  • No-calorie cooking spray
  • Preheat the oven to 375 degrees. Lightly spray 8 x 8-inch or 9 x 9-inch ceramic baking dish with no-calorie cooking spray; set aside.
  • Layer bottom of dish with banana slices. Sprinkle with half the berries, 1/4 tsp. cinnamon, 1 tbsp. honey and cover with foil.
  • Bake 15 minutes, until the bananas get soft.
  • Meanwhile, in a medium bowl, combine the oats, baking powder, and remaining cinnamon.
  • In a separate bowl, whisk together milk, egg, vanilla extract and remaining honey.
  • Remove dish from oven. Pour oat mixture over cooked bananas and berries.
  • Pour milk mixture over oats, making sure to distribute mixture as evenly as possible. Sprinkle remaining berries over top.
  • Bake oatmeal for about 30-minutes, or until top is golden brown and oatmeal set. Serve warm from the oven or chill for later.
