• 1 x 1.8kg organic chicken, jointed
• 500ml butter milk
• 250g rice flour
• 1 teaspoon ground coriander
• 1 teaspoon chilli powder
• 1 teaspoon ground fennel seeds
• sea salt and pepper
• cottonseed oil for frying
• 4 corn cobs in their husks
• 1 green chilli
• 1 tablespoon brown sugar
• 1 onion, finely chopped
• 1 clove garlic
• 150ml olive oil
