Ingredients
- 3 lbs Yukon Gold or red potatoes, cut into 1" pieces
- ¼ cup diced, roasted sweet onion (roasted ours in the air fryer)
- 1 cup mayonnaise
- ¼ cup Dijon mustard
- ⅛ cup chopped fresh chives
- ¼ cup chopped fresh parsley
- 6 slices bacon, cooked until crisp and chopped
- 4 hard boiled eggs, peeled and sliced
- ½ tsp ground black pepper
- ½ tsp kosher salt
