Vegetarian Matzo Ball Soup - Oryana
Traditional matzo ball soup is prepared with a whole chicken. This version omits the chicken and yields a satisfying vegetarian soup for Passover or any time.

- 6 cups vegetable broth, preferably homemade
- 2 large carrots, peeled, sliced
- 2 stalks celery, cut into chunks
- 4 cups napa cabbage, chopped
- Fresh parsley and dill
- Salt and pepper
- 1 package matzo meal to make the balls (follow the directions on the package*)
