• 12 each Scallops, Sea large, dry, intact
• 3 tablespoon Oil, Grapeseed
• 1 pounds Corn divided in half
• 1/8 pound Butter
• 1 cup Cream, Heavy
• 1 1/2 teaspoon Sugar
• 4 teaspoon Corn Meal
• 1/4 teaspoon Salt
• 1 each Egg Raw separated
• 4 teaspoon Chives chopped
• 1 1/2 teaspoon Basil, Fresh minced
