Mary Berry Sausage Tray Bake Recipe 🍲

Ingredients

• 8 sausages of your choice
• 800 g (1.8 lb) baby potatoes, halved or quartered if large
• 4 carrots, peeled and cut into chunks
• 2 parsnips, peeled and cut into chunks
• 2 red onions, peeled and cut into wedges
• 2 red peppers, deseeded and cut into chunks
• 200 g (7 oz) cherry tomatoes
• 2 tbsp olive oil
• Salt and pepper, to taste
