• 2 Cup Chicken, diced, baked or rotisserie chicken. See Note 2
• 1/2 lbs Pasta, dried, semolina macaroni or penne pasta
• 1/2 Bunch Basil, fresh leaves, 3-4 tbsp when chopped
• 1 Cucumber, medium english cucumber, seedless, diced
• 1 Cup Cherry Tomatoes, halved
• 1 Cup Red Onion, a medium onion, small diced
• 1/2 Cup Kalamata Olives, pitted, sliced or chopped
• 1/2 Cup Parmesan Cheese, grated
• 4 Oz Feta Cheese, diced or crumbled
• 2 Roasted Red Bell Peppers, small chopped
• 2 tbsp Olive Oil
