Chicken, Chorizo and Tomato Casserole Recipe

Ingredients

• 2 tbs plain flour
• 8 bone-in chicken pieces (like thigh cutlets and drumsticks), trimmed
• 1 tbs olive oil
• 1 (125g) chorizo sausage, diced
• 1 brown onion, finely chopped
• 2 garlic cloves, finely chopped
• 1 yellow or red capsicum, deseeded and roughly chopped
• 400g washed potatoes, cut into 2-3 cm pieces
• 2 x 400g cans Ardmona Crushed Tomatoes
• 2 tbs chopped flat-leaf parsley
• Crusty bread, to serve
