Persimmon Spice Cake - A better choice!

Ingredients

• 4 - 6 Persimmons, very ripe and soft yielding 1 1/4 cup pureed pulp
• 1 tsp Baking soda
• 1/2 Cup Butter
• 1 Cup Sugar
• 1 Egg
• 1 ¾ Cups Self raising flour
• 1 tsp Cinnamon
• ½ tsp Fresh nutmeg, (or ¼ tsp ground nutmeg)
• ½ tsp Ground cloves
• ½ Cup Walnuts, finely chopped
• 1 tsp Lemon zest
• 1 tsp Orange zest
