Guinness Cake with Bushmills Zabaglione - Mark Addison

Ingredients

• 3 1/2 cups all-purpose flour
• 2 teaspoons cinnamon
• 1 teaspoon mace
• 1 teaspoon ground ginger
• 1 cup butter or margarine, cut into cubes
• 1 cup seedless raisins
• 1 cup golden raisins
• ½ cup finely chopped candied ginger
• Grated rind of 1 lemon
• 1 3/4 cups soft brown sugar (dark brown works better)
• 1 5/6 teaspoons baking soda
• 2/3 cups Guinness
• 4 eggs, beaten
