Sweet Potatoes with Baked Beans & Guacamole | SPC

Ingredients

• 4 medium sweet potatoes, scrubbed
• 3 tablespoons olive oil
• 1 tablespoon salt, plus more to taste
• 1 tablespoon freshly ground black pepper, plus more to taste
• ¼ cup chopped fresh coriander plus more for garnish
• nice feta cheese, for topping
• sprinkle of chilli flakes, to taste
• guacamole (see recipe)
• 2 ripe avocados halved, stones removed, peeled
• 60ml (1/4 cup) fresh lime juice, plus extra to serve
• 1 small red onion, finely chopped
• Handful of coriander, finely chopped
• 1 ripe tomato, finely chopped
• 2 garlic cloves, crushed
• 1 small fresh red chilli, deseeded, finely chopped
• Salt & ground black pepper, to taste
