White Vegetable Soup

Ingredients

• 1 large onion, diced
• 2 tablespoons oil, such as Gefen Canola Oil
• 2 parsnips, diced
• 1 small bunch parsley roots, diced
• 2 knobs celery, diced
• 2 cups cauliflower florets, such as Beleaves Frozen Cauliflower, diced
• 3 potatoes, diced
• 1 package chicken bones or 2 chicken bottoms
• 1 tablespoon salt
• 12 cups water
• 1 cup barley, such as Gefen Pearl Barley
