Canadian Salmon Pie

Ingredients

• 2 cups flour
• 1/2 tsp salt
• 2/3 cup (150 gm) butter,
• 6-7 Tbsp ice cold water
• 1 egg +1 Tbsp water for eggwash
• 680 gm potatoes,
• 2 Tbsp unsalted butter
• 1/2 cup onions, chopped
• 1/2 cup water
• 680 gm salmon fillet, bones removed
• 1 tsp dried thyme
• 1 tsp Old Bay Seasoning or to taste
• 1/4 tsp pepper
• 3 Tbsp unsalted butter
• 3 Tbsp flour
• 1 1/4 cups milk
• 2 Tbsp lemon juice
• 1-2 Tbsp fresh dill, chopped
• salt & pepper to taste
