Sausage Handheld Pies - Goolsby Sausage

Ingredients

• ⅔ cup sour cream, chilled
• 1 large egg, lightly beaten
• 3 cups unbleached flour
• 1 ¾ tsp salt
• 16 tbsp unsalted butter, cut in half-inch pieces and chilled
• 1 tbsp unsalted butter
• 1 onion, chopped fine
• Salt and pepper
• 1 tbsp minced fresh thyme
• 2 garlic cloves, minced
• 6 patties of Goolsby’s Sausage, thawed
• 10 oz russet potatoes, peeled and cut into half-inch pieces
• 10 oz rutabaga, peeled and cut into half-inch pieces
• ¼ cup unbleached flour
• 1 large egg
• 2 tsp water
