Ingredients

• 1/4 cup vegetable oil ((Use 1-2 tablespoons for a lighter fry))
• 16 corn tortillas ((6-inch))
• 2 cups refried beans (warmed (16 ounce can))
• 1 teaspoon vegetable oil
• 1 pound ground beef
• 1 tablespoon taco seasoning
• 2 cups enchilada sauce ((or use taco sauce))
• 8 ounces cheddar cheese (shredded)
• Toppings: Diced tomato, sliced black olives, green onion, hot sauce
• Salt to taste
