• 2 large sweet potatoes, peeled and cut into 1/8-inch slices
• 1 tablespoon olive oil
• 2 medium tart apples, cut into 1/8-inch slices
• 2 tablespoons lemon juice
• 6 ounces Cheddar cheese, shredded (1 1/2 cups)
• 1/4 cup honey, warmed
