Grilled Lamb Chops with a Potato Pancake | Saveur
Erin Cannon-Chave often makes this Ardeche-style potato pancake. The lamb chop recipe is based on one that appears in Richard Olney's Lulu's Provençal Table.
Ingredients
- 8 blade or loin lamb chops
- Freshly ground black pepper
- Pinch cayenne
- 3 tbsp. extra-virgin olive oil
- 3 bay leaves, torn into pieces
- 4-6 sprigs fresh savory
- Salt
- 2 medium russet potatoes, peeled
- 2 cloves garlic, peeled and minced
- Leaves of 3 stems parsley, chopped
- Salt and freshly ground black pepper
- 2 Tbsp. butter
- 2 Tbsp. vegetable oil
