Ingredients

• 1 lb. bulk sausage, sweet or hot
• 3 Tbsp. Olive oil
• 2 celery ribs, chopped
• 2 medium carrots, chopped
• 1 leek, white part chopped
• 1 medium onion, chopped
• 1 cup butternut squash, cubed
• 1 medium zucchini, diced
• 1 c green bean, cut into ½- inch pieces
• 2 c shredded cabbage
• 2 c kale, chopped
• 2 c garbanzo beans
• 3 Tbsp. garlic, minced
• 2 c diced tomatoes
• 6 c chicken stock
• 1 tsp. dried basil
• 1 tsp. dried oregano
• 1/3 c shredded parmesan
• Salt and pepper, to taste
