Ingredients
- 8 ounces Brie cheese (one round)
- *PEARS*
- 1 (7 ounce) pear, thin sliced (firm pear, I use a bosc pear, Anjou is too soft)
- 1 shallot, thin sliced
- 1/4 cup pear juice (you can substitute apple juice)
- 1 tablespoon brandy (you could also use a pear brandy if you used apple juice)
- 1 teaspoon brown sugar
- 2 teaspoons fresh thyme, chopped
- pinch of salt
- pinch of pepper
- 2 teaspoons butter

- slivered almonds, toasted or not
