- 3/4 cup Mexican or other honey
- 3 tablespoons cider vinegar
- 2 large pieces bone-in skin-on chicken breast
- 4 bone-in skin-on chicken thighs
- 4 chicken drumsticks
- Salt and pepper
- oil for frying
- 4 extra-large egg whites
- 3/4 cup cornmeal or fine breadcrumbs
- 1 cup flour
- 1 teaspoon baking powder
- 1 tablespoon ancho or medium-heat chili powder
- 1/2 tablespoon smoked sweet paprika
- 1 teaspoon garlic powder
- 1 teaspoon granulated onion
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 lime
