• 4 medium potatoes -- diced
• 1 onion -- chopped
• 1 cup chopped smoked turkey breast or ham
• 4 cups chicken broth
• 1 teaspoon dry mustard
• 1/2 teaspoon salt
• Freshly-ground black pepper -- to taste
• 1 package frozen spinach - (10 oz) -- thawed, squeezed dry
• 1 cup shredded Swiss cheese -- (optional)
