• 1/2 teaspoon vanilla extract
• 1 egg, slightly beaten
• 1/2 cup (100g) granulated sugar
• 1/2 cup (106g) brown sugar, packed
• 3 tablespoons all-purpose flour
• 1 teaspoon ground cinnamon
• 1/4 teaspoon ground ginger
• 1/4 teaspoon ground nutmeg
• 5 large, tart, firm apples, thinly sliced (tested with Granny Smith)
• 1 tablespoon lemon juice
